That dog's been wenched so he had a good day. I remember that monk at MIRF this year, very informative exhibit. Even for those liek myself whom have studied brewing and it's history he had more tips and history to tell. Hope their there again this year, and come with soem of the ale they brewed. If I remember correctly, it was ale brewed using balsam or scotch pine needles, oats, some barley, and a small amount of hops, and slowly simmered over a fire so all that wood smoke added flavor too. I've had scotch pine ale from Scotland and it's quite filling and good. A most interesting taste. So hope to see them again. the other flavors of beer/ale they had weren't all that bad neither. Especially that Final Absolution by Dragonmead brewery here in Michigan. It tastes like an imported Belgian. Awesome stuff. Can't wait for fest.
