Will the Viking plates work with any Viking model?

Dunno...  Won't fit very old machines...  You may need to ask for one to fit your particular model.

I don't have one yet, but one of the ones I'm looking at is an Emerald. And I didn't know, since it's a lower grade, if things would still work with it.
