Dumb food question from a poor mac n crackhead...

I NEED macaroni and cheese on a stick. Do they have it here at TRF somewhere??? Where can I find it???

I don't think I've ever seen that out at faire... I may be wrong, though, cause I don't pay much attention to food signs out at the festival... I'll eat too much if I do. XD

All the rage at the Canadian National Exhibition in Toronto this year..... bacon dipped in chocolate on a stick!!

Well, I actually had it out at RenDezvous at MDRF. They call it Mac n Crack there, and I understand WHY! OMG ITS SO GOOD!!!! See, now I need to figure out how to do it. From what I gather, it's as simple as cutting up either refrigerated mac casserole (or using frozen mac), breading it, and throwing it in the fryer. Seems rediculously easy, and I MUST learn how to make it work. Oh yeah, and you better bet I'll be putting it on a stick...

They have had it the past couple of season at Scarby really good and easy to eat finger food.  There you get around six triangle pieces to a stick.

Anything on a stick is the latest food craze.  Last year everyone wanted sliders (mini hamburgers) and now...if it comes on a stick and deep-fried you've got a money maker.  Deep-fried Mars bars are awesome too.  My favourite is still deep-fried zuchinni with a drizzle of lemon...mmmmmmmmm

Okay, now I have to play with the deep-fryer when I get to work tomorrow.  Chef is going to love me.

I dunno, Blue, I remember seeing it at Scarby but not TRF.

Still, I think you could do it as such:

Make some mac-n-cheese in the usual way

add an egg and some breadcrumbs until you can get it to stick together and form the shapes you want (like the wedges they have at Scarby)

Then dip in flour, then egg wash, then breadcrumbs and deep fry, preferably in one of those fry daddy things because I don't know how to deep fry in anything but one of those or a commercial fryer. (Rumor has it that if you heat a couple inches of oil in a dutch oven or sturdy pot, then stick a wooden spoon handle in the oil and if it begins to go nuts, then the oil is hot enough.) When the wedges turn golden and float, they are probably done. Drain on paper towels.

That's what I would do. Then skewer and consume. Might take a couple of tries to get perfect crackness, but I bet it works.

Head over to the Feasting section on the TRF website where they list all of the menus for the eateries. I did a quick look and, unfortunately, it is not listed. You might try the Friten Hausen when you get there, that is where they have done fried Snickers, Twinkies and Monte Cristos in the past. Most of the fried foods are first tried out at the TX State Fair. New this year, believe it or not, is fried butter.

They have it at Scarby, I am so weak for that stuff! It really is amazing, they do not give you nearly enough for the 3.50 or something that it costs :(

The minute they get it at TRF Willow and I will be the first to know about. We have radar for that stuff! It does make me sad, but it is not at TRF.

It's actually very easy to make if you need a fix. :)

Make your favorite mac 'n cheese recipe (the cheesier the better!) and after it is cooked and you've eaten whatever you want to eat while it's hot, stick it in the fridge.  Once it is cold all of the way through, cut it into slices, then cut each slice diagonally into wedges.  Dip in an egg wash (a beaten egg and a little hot sauce is my favorite egg wash), then into bread crumbs.  Repeat.  Set on a rack for a couple of minutes in order for the egg wash to set up the bread crumbs.  Otherwise the breading will just break right off when you fry it.  After about five minutes, drop into heated oil and fry until GB&D (golden brown and delicious).  The coating will be crispy, the cheese will have re-heated and melted inside, and you will have ooey, gooey happiness.  Do not overcook as it will probably fall apart if you do!
