Ahhh... An old but fresh topic. Like a well aged cheese. ;D
What delightful dish are we all looking forward to? There are so many with so little time in faire. I'm open to ideas for camp food as well... ;)
ROYAL BURGER!
Actually; older version of some Renaissance food I crave every year. Remember when Scotch Eggs were fried
and not baked? Someone, probably with no taste buds and healthy intentions, decided the "good for you" cholesterol-filled boiled egg and fat-loaded country sausage needed a few grams less fat and decided all of them would be baked.
The result was an instant 1/2 gratification of what once was a joyous experience. If I wanted to eat healthy at a Faire, I'd have a bottle of "red" in one hand and a head of cabbage in the other.
I really wish we had "like" buttons for comments.
Baked scotch eggs :o
Always love the prime rib trencher...and the alligator...and the crepes...well most everything I've tried out there.

Yeah, I'm not sure who did the Scotch Eggs such a dis-service but they need a bath in batter and a short dip in boiling oil...
I always look forward to whatever Capt. Sin throws together on Friday night of AHE. Doesn't matter what he puts together, it's always good! Last year he made a huge pot of Jambalaya and it was better then what most Cajun restaurants put out.
I remember seeing something here about BS not being there for AHE this year. Say it ain't so! :(

I finally tried the Welsh Fish-n-Chips last year... new "must have" favorite.

They'll be there... it was just the way that Jess moved info from last year's Who, What, When thread...
I have to agree with both Fraser and RenStarr. The Welsh Fish and Chips have been a must have for me for several years. Generally from the Prince of Wales.
And Cap't Sin's cooking was fantastic last year. Course, it always is. Only part of the joy of sharing with the Bayou Scoundrels. (They also tell good stories...Ask about the helmet)
One of my "must have" foods for opening weekend is a BIG DILL PICKLE! (I tell myself it is to replace salt that I sweated out but my cardiologist might not agree) HAZZAH to the Pickle Man!
It's like getting a fix... if I have one Royal Burger, I'm good for the season.
The Polish Variety platter is tops, too...if you like Polish food.
And if I'm going home afterwards, I'm in no-freaking-way allowed into the Greek area. Lamb & beef gyros.... NOM NOM NOM.
Oh Fraser, Thank you for reminding me of the Souvlaki...That's a must have for me as well.
For those who love Kielbasa & Perogies, and want to have some of the same faire food during the off season...
http://www.poloniarestaurant.com/ (http://www.poloniarestaurant.com/)
Family run, right here in Houston.
Now, as for camp food... I usually end up drinking my dinner. ;D Everyone sucked down on the beef stew I made AHE, so I guess that turned out ok. I mean a whole 10qt pot was eaten, so I'm guessing people liked it(or were too drunk to care). ;)

I bit of both probably... ;)
Used to LOVE the greek noodles and then they got cheap and started using spaghetti noodles. :-(
When I land grab, I usually do burgers, sausage & hot dogs, for dinner, on Thursday night. What ever is left over the following morning gets chopped up and tossed into a skillet with eggs. Add some cheese & tortillas or fried bread and you have a dawn fry to help with the hangover. ;D
There are some people on R/F that can remember the "Year of the Fires" and the monsoonal, ice cold rains that rolled in Thursday night, AHE. Ten of us standing under my canopy, grilling mushroom & Gouda cheese stuffed burgers & venison sausage, on a camp stove. Nasty night but the food & company was fantastic. ;)
I recall this one evening after faire, several of us were sitting around the campfire, and all hell broke loose. To this day, that hotel won't let us stay there...
There was this one time, in Faire Camp, when this person took a bagpipe and.... ;D

That was a fun night...Bret trying to eat a 3/4 pound cheeseburger without taking a breath(hungry little booger, wasn't he?;D) and Brandon chasing PR's canopies...
Hmmm...with M-I-L leaving TRF, I wonder if there will still be a cigar vendor out there. I like a nice Macanudo, Romeo Y Julieta or Acid after some good chow and while I'm walking about faire.
*Cigar in one hand and beer in the other*
Faire food exceeded my budget some years ago. I do remember enjoying the ice cream cones from the pirate area back in the day though.
For breakfast!
I need my Apple Pie Porridge Oatmeal from the Queens Pantry - husband likes his Biscuits and gravy. We'll get those, walk across to indulgences, and do some early morning people watching.
Now, I like to think I am fully grown and an adult and all that, but I still get cranky after walking around the mini-nation of TRF. SO, around 1PM I usually start getting grouchy and Alex, my dear husband who has the patience of Buddha, will take me to the Greek Agora and get *forgot name of dish, but its soba noodles panfried with veggies in it. Comes in a cup * and a Coke/frozen drink to calm me down.
A couple hours after that, we'll usually get something salty, like sausage or the alligator. Though last year the alligator they had there was way, way too small. On our way back to camp, we'll usually get something sweet like some funnel cake or whatnot.
I'm craving it all!

Jack, I had them last year closing weekend and they were still the thick soba/udon noodles as always. However, I have heard that sometimes they run out of those noodles and have to sub 'ghetti noodles. Maybe that happened? I would try them again - they are just as good as you remember, if not better!
Thinking about lamb & beef gyros...and dreading the aftermath. ;D
*Beans have nothing on lamb & beef gyros.* :o
Now, I have sticks of fried Shrooms dancing through my head.... >:(
All kinds of new grub coming this year.
Slammer...Cheese stuffed Jalapeno, surrounded in pork sausage, wrapped in bacon then deep fried. *Think Mexican Scotch Egg* ;D
Deep fried Sauerkraut... :-\
S'mores on a stick... :D
Nachos on a stick... :o ???
Chicken fried pork ribs... :-\
Fried Lobster... :o
All kinds of new stuff to try! ;D

Three words...Deep Fried Baklava. ;)
I might be one to try that fried sauerkraut. I did a quick Google, found some recipes, and have to say that any recipe that starts with sliced onions and bacon drippings can't be all bad. :)
I've missed TRF the past couple years and hoping to get back this year at least once.
Oh my word fried LOBSTER!
This does NOTHING for my horrid faire itch. Soon Alex and I will have a garb day.... I don't think I'll take it off until faire. :D

Too late. :P
Right now I've got a hankering for one of the delicious Gyros they serve at TRF's Agora area. Not sure if "hankering" is a Greek word, but it works for me. :)

I'm sure there's a word in most language's that would translate into Texan for "hankering". And if there isn't, that language would be of no real use here in Texas. One of those Gyros does sould pretty good right about now.
Greek sausage to go with it...

Wondering how in Texas they may pronounce the word gyro ;)
We just say "Gyro".
Example: I'm fixing to head over the Agora area cause I got a real hankering for a Gyro. ;D

I was taught by some Yankee Greeks that it was more like "yee-ro". But it might have been their accent. :)

that's actually close, soft of the 'y' and just need a tiny bit of 'r' trilling
I'm told it's pronounced "year-ohs"; with a light rolling of the R, so it sounds more like " yid-ohs"
I say "geer-oh" and when people insist I'm saying it wrong, I offer "at least I'm not saying 'JHY-row'"
Then I look at Gauwyn's astrolabe, and see it's time for another beer!

Gauwyn, looks you nailed it for how it's generally pronounced at the Texas faires. There's a local greek place that we stop at from time to time, and that's how they pronounce it. Sounds like it might not be the Greek way to pronouce it, but it's gets the job done when your standing there with $$ in hand.
And it still sounds pretty good right now, however it's pronounced. :D
Ask someone from Pittsburgh to say it.
Hee hee
IS IT FAIRE YET? I can almost smell kettle corn...
...and hear the pretty, young lass ask "Would you like to try my nuts?"
No but would you like to try mine? :o
Yep, I went there. ;D

Ok, Camp Food!!
What are people cooking?
Depends on if I have a job or not. If I do then I'll probably try for the campfire onion bombs again this year. If I don't I maybe depending on the kindness of others to help supplement my food and drinks for the weekend. ??? ::)
Things are a bit tight on my end as well...the beef stew is still a go, so far. :-\
Fraser, Lady Jessica,
Come by and see StudMuffin & me. I'll always have a beer for you.
Usually St. Arnold.
Then we can storm the gates and force our way in.
We all might have to do a "Rennie Stone Soup" night, before it's all said and done with...I'll bring the rock. ;D
*Actually doesn't sound like a bad idea. Hmmmm*
Ive stockpiled a bit over half of the stuff I need for my Saturday night stew...some more veggies and maybe a chuck roast I can let simmer for a couple of hours before I build the stew on top of it.

It's the REST of the weekend Im' not too sure about. :-\
*sigh* Well, even if it's sandwiches and chips, at least I'll be at faire.
Yeah, we have had years where it was hot dogs and sandwiches for the weekend. That may be what we end up with this year! We will see...

Ok, Camp Food!!
What are people cooking?
Apple Brats Friday night (want beer brats but why waste good beer on cooking when you can drink it?)
Breakfasts are eggs, sausage and any left over cheese, lunch meat, brats, and onions from the previous meals
Then home made chili Saturday, and Sunday is home made Chicken vegetable noodle soup.
What was annoying last year was that we had several people drop out at the last minute so we had Chili and Soup for 18 but only 12 stomachs. Everyone around us had their own food, so it went to waste.
BTW we have a case of Cornoa left over. 99% like to chew our beer. Curious if the Cornoa could be used for the brats.......
sounds like a good use for Corona to me :)
Would they be any good in Corona? We have always used a clearance or very cheap beer or cider for our beer brats. (Save the Guinness for good stew :) )
I wouldn't want to ruin my brats with Corona. It's hard enough to get down as it is...not the brats, the Corona.
Hence the reason the Corona has been a door stop for the front door for the past year instead of consumed. :)
Ok, so Apple Brats it will be !
Hobo pockets are always good for camp food... especially if you have a lot of leftovers from the night before, and want to use them for breakfast the next morning. Let everyone load their own with whatever sounds good, and bury them in the coals for a bit, and breakfast is ready! They're especially good for ready made biscuits (from a tin), shredded or diced hash browns and sausages... and add scrambled eggs afterward. Hash browns in first, on the bottom, then sausage (so the grease will help the potatoes cook... precooked is good, but raw will work, also), then biscuits on top before you fold over the foil and seal it all up. Just leave a little room for the biscuits to expand, and toss some coals over the top and wait 15-20 minutes. Mmmmm...
I managed to find the Slammers... as i thought, these will be excellent hangover food. ;)
I was happy to find the big noodles back at the greek
Getting sooooo excited for Faire Food!!!!
Question! We are headed this weekend, which I know is a slow weekend for group camping. It has been a few years since I have been out to camp...what is available food wise to purchase out at camp now? Like already cooked ;). Lol
Soooooo...I couldn't get a response to the campground food options...sooooo I decided to cook! After spending the day googling and tweaking a few recipes...I did a trial run on this one tonight and it cameout amazing!!!
Cut up and seasoned chicken thighs mixed with cream of mushroom soup
Pre cooked rice
Ranch dressing
Motzarella cheese
Heavy duty tin foil
Pam
2 sheets of foil per packet...spray Pam on the insides
Layer 1 - rice
Layer 2 - thick layer of Ranch Dressing
Layer 3 - cheese
Layer 4 - chicken mixture
Fold up packet and leave on coals for 20-25 minutes sooooooo yummy and kid approved!!!
