I promised Milord a new linen shirt, and I thought I had a gazillion patterns... but I'm not in love with any of them. We like the look of Simplicity 3519 (http://www.simplicity.com/p-1900-costumes.aspx)... except it has no shoulder seams, which I would find really uncomfortable! I'd love to find a pattern with a yoke, and DH says "not too pointy a collar."
ETA: This picture is terrible, but I think it's the basic construction I'm looking for (see the set-in sleeves + yoke?):

we are having the same problem, milord doesn't want it to be too poofy and he has issues with the lack of shoulder seams as well

This is one from Alter Years that I use a lot for Men and Women. I have also used this pattern for a Cavalier styled shirt with a hand drafted collar and cuffs from scratch. The added figure 8 ruffs, I do myself.
I would have to look for the number, but the one I use is out of print. It does have a collar, but you could just leave that off. It has set in sleeves, a yoke and laces in the front.

I've made a couple of the Simplicity 3519's over the weekend. I really like the yoke rather than the shoulder seams. The sleeves are VERY puffy. I'll eventually use some sort of print for the yoke and a solid for the body and sleeves. Very easy to put together.
If I had anything to caution, it would be the gathering technique (basting stitch and pull bottom threads). Makes it a little tough to gauge gathering exactly since it slides so much. I think I'm going to "finger gather" the next one.
The body is very flowy, so fit's not a big deal. However, the yoke pretty much fits the chest size -- if you go too small, the body will fit, but the yoke will be tight.
