Wow... my mom made manicotti for us this afternoon, and we get leftovers for supper tonight!  ;D  It's delish, also... and I'm making a fruit and custard shortcake for dessert!

This one is really simple but look impressive.
coat 12" pyrex baking dish with olive oil
Cut 2 boneless skinless chicken breasts into 1-1/2" pieces and layer into baking dish. Season chicken liberally with basil, onion, garlic, salt and white pepper. Bake in oven @ 375 for 10 minutes.
In a seperate dish combine 1 can diced tomatoes with 1 can spahghetti sauce. Add to this mixture, 1/4 teaspoon oregano, 1 minced garlic glove, 1 tablespoon grated parmesan and 1/8 teaspoon salt.

Layer approx 2 cups freshly washed baby spinach leaves over chicken.
Spread tomato mixture over this and return to oven. Bake for an additional 25 minutes and serve with risotto.

Fresh peach. Skin and all, no salt!
