My fiancee and I are trying to find sites for our wedding next year here in the Phoenix(and surrounding) areas of Arizona.
Of course its a Medieval/Renaissance themed wedding.
Any help is appreciated

I am a lurker here but decided to go ahead and sign up to post since this is right up my alley, at least I think! Congrats on your engagement, I remember reading about that on the AZRF board. I am getting married next year myself, at AZRF. The chapel area is kinda exposed to the public and dorky looking but I figured it would be fun for our guests to come and play.
Sedona has to be number one if you want an outdoorsy wedding, it is an extremely popular destination with locals and folks all over the world. So much so that there is en entire wedding boom industry up there. The scenery is outstanding and not too terrible a drive from Phoenix. Noblesse Oblige has a brick and mortar store up there as well. http://www.visitsedona.com/
Within Phoenix, The Botanical Gardens could be nice if you're looking for desert scenery http://www.dbg.org/.
I also hear about Boojum Tree a lot, paticularly in local wedding publications. It does look charming from the photos, but I think it is pricey. http://www.boojumtree.com/
I have been to and like the Japanese Friendship Garden, if you do not mind Japanese touches to your wedding, it is a nice little spot in downtown Phoenix. http://phoenix.gov/parks/jfg.html and http://www.japanesefriendshipgarden.org/
The only thing I could ever find for a castle wedding arround town is Ashley Manor http://www.thecastleatashleymanor.com
The Irish Culutral Center is an idea, it is next to the Japanese garden. http://phoenix.gov/PARKS/irishcc.html
Encanto park is a large public park within downtown as well, it used to be the home of the Barony of Atenveldt's weapons practice. http://phoenix.gov/parks/weddings.html breaks down sites in the various parks.
