Title: Getting ready for Scarby
Post by: Drac on March 21, 2010, 08:05:55 PM
Evening all,

The one thing that stands out about Scaby over any other fair are the ribs.  I pick up a jar of seasoning each fair (sometimes I order one from them in between) and do up some ribs.  Normally I head to Central Market and pick up some uncut short ribs (about 9" long) or some flanken style.  Made some of both styles last couple weekends -

Un-short short ribs -

Flanken ribs -

Looking tasty?

Thanks all.  It's a little hard to see the short ribs are done low and slow with some heavy smoke.

Though I seem to missing something with the mimosas.

I did make enough for everyone.  Unfortunately only my wife showed up.  Sorry.
