After some trepidation, research, a really bad feeling about the Buccaneer's chances for success this year, and a bottle of Mudslide mix, I decided to take this Sunday to attempt the all-time widow maker of recipes- haggis. I found a naturalized recipe by Jeff Smith that uses beef ingredients instead if lamb, which is not readily available at the local supermarket..
Major Ingredients
1 lb beef heart
1 lb beef liver
1/2 lb lamb stew meat
1 1/2 cups diced onion
4 tbls scotch
2 cups toasted oatmeal
Seasonings
2 tsp salt
1/2 tsp fresh ground pepper
1 tsp thyme
1/2 tsp rosemary
1/4 tsp nutmeg
The Casing
4 beef CAPS*
*Now, since I decided to do this on the fly, I'm going to steam this in a Glad Turkey Sized Oven bag.
Simmer heart for 1 hour 10 minutes, then add liver and lamb and simmer another 20 minutes. Remove from heat and allow to cool. Reserve 1 cup of the cooking liquid.
Mix all ingredients together, divide in thirds, and stuff the casings. Steam for 1 hour 20 minutes.
I'm stoked!! ;D
So...who's taking action on how this will turn out? I'm wrapping up the meat poaching, and I will update you as the recipe craters I go.

I have retrieved the meat, chopped roughly, mixed with onions and spices, and am filling the casings(+-). They're going in the steamer...

Done! It turned out pretty good! It's a meaty, tasty treat served over potatoes....it's not as weird as you might think. The beef heart is amazing. Red sez she would go back for seconds anytime....

Beef heart is quite tasty. My fav way to cook it is lightly fried, and served with biscuits and white(peppered) gravy. YUM!!!

Thank thee, Sir Marcus! I love to cook, as any one who has been to the Manor well knows. This had to be oddest recipe I've ever tried. Most people don't cook with a lot of offal (the nasty bits, organs, ect.) and this recipe is all about as ancient as it comes. One really cool experiment....

Haggis is also good suffed in dinner rolls! Great for the on the go scots man!
Goes well in sandwiches! With a good, whole grain mustard. And the oatmeal keeps that Scotsman on the go....

I've never made it, I just buy the can stuff. I might try too make it some day. I do like my haggis with nips and tatties. I wish they had a food booth at TRF that had it, I would much prefer haggis to them scotch eggs.

I'm not sure that haggis will replace scotch eggs as the Breakfast Food of Champions. Love those scotch eggs.....hold the eggs....
