What "Not to miss" to see?

My family and I are looking at Sterling as a rennfest to visit soon. I was wondering what you thought were acts/performances that shouldn't be missed or booths that are especially good? I find that one day is never enough for a good festival, but may be all we can do with a newborn on hand.

I vote for:

*Wolgemut: "a Renaisasnce rock concert" whose intention is to always leave the crown in a good mood though music and comedy
*Hey Nunnie Nunnie: Two nuns who, through hilarious songs, teach the folly of sin and some factoids about the Bible (Did you know there were 5 constipated men in the Bible? Like "Noah, he nearly filled the Ark")
*Don Juan & Miguel: This year was my first time watching them and I laughed so hard I honestly couldn't breathe. They mix sword fighting, whips, comedy and romance together so masterfully that they've been performing all over the country for over 20 years. And Miguel has invented his own instrument! Google "BLADIVARIUS" to see a performance.
*Emrys Fleet's Rat Extravaganza: This man is insane in the most lovably hilarious way. "Have you ever heard of Haggis? It's the national dish of Scotland: a sheep's stomach stuffed with oatmeal and boiled to perfection.  What's the difference between a bagpipe and a haggis? If you boil a bagpipe long enough you can eat it!" AND he hosts rat puck, an enormously fun game that is a mixture of golf and bocci, except played with colorful stuffed rats.
*The Street: Pick a place and sit for about 40 minutes. Have a turkey leg or a piece of mile-high cake and just wait. I guarantee you that during that time a few of the festival's actors will have an interaction right in front of you. It could be a dual between two lords, a lesson in thievery from a gypsy, or maybe just a muddy beggar looking for food (probably from you). Try not to spend so much time at shows that you miss out on the improvised street stuff, because some of it is incredible!

ARCHERY!  You need to play ARCHERY! 

EVERYONE needs to play ARCHERY!  Many times.  O'er and O'er and O'er and O'er and O'er.

Remember - it's your civic duty to slay the wild hay!  Protect the shire from the depredations of ferocious fodder.  The family that slays together stays together. 

Enjoy your festival day and play with a sharp pointy object!

Thank you to one and all for the input on sights to see. We have booked the trip and will be there for the July  18-19 weekend (2009). We have even managed to convince another family of former ORF patrons to join us there.
