Saturday night cajun gumbo

So my party and I have decided to haul out the gumbo pot and a couple of chickens and hogs for Saturday night.
Anyone interested in some authentic cajun cooking (while it lasts) should come by and introduce themselves.  We'll be a party of 5 (probably) camped out in the dark at D-0, right at the dead end, look for a big red dodge.  The plan is to leave the faire at around 6:30 on Saturday evening to get it started, should be in full boil by the time the faire closes.

oooo I love me some gumbo... alas that is the night my camp is doing their Thanksgiving Dinner so I'm sure I'll be stuffed.. but I'll be sure to try and stop sometime!

This thread warms my soul in ways that I can't begin to describe.  We will definitely be back this year, and will definately be cooking on thanksgiving, at LEAST.
Maybe I can scare something up for the October trip, too.  We'll see.




[EDIT]: I don't visit here a lot during the off-season, if you'd like my facebook info, inbox me and I'll share that.  It gets kind of hairy at times, though, so be warned.

[EDIT #2]: Forgot to mention that I've got a whole bunch of mead from this summer's test batches for tasting!  I've got Pineapple/Kiwi, Pomegranate/Rosehip, Traditional, Traditional aged with light toast oak, Traditional aged in heavy toast oak, and a Citrus mix; all around 10-11% abv.

Xed, if you would be so kind as to hold some of the rosehip mead until closing weekend I'd be ever so grateful!! I would LOVE to try that!

It's mostly pomegranate, though.  The rosehips weren't strong enough to really make an appearance over the tartness of the poms.
