Hi, and welcome to the forums!

For the English Civil War, in which the Cavaliers fought, you will want wool. ("Wool" is actually pretty much *always* a good answer for "What's an accurate fabric for....?"  ;))

This is a good site for costuming for the English Civil War:

As Gem said, wool.  If you are doing noble, silk is also appropriate but make sure it's a silk taffeta or another silk that doesn't have slubs in it.

Wool comes in a lot of different weights - most people tend to think of wool in terms of coats and blankets which are heavyweight wool.  I have a summer Regency dress out of a lightweight wool that I wear a lot to early 19th Century events.  I also have a lightweight wool 1560's Italian dress that I love and wear to summer events as well.

I'll third that!  I love wool! You cannot beat the look and drape.  I wear a wool doublet, and it is quite comfortable.
