Yeah we are ABSOLUTLEY inocent of any claims of poaching!  We would never do it, unless Scotsman wasn't watching that is!   ::)

But!  But!  Eggs Benedict just wouldn't be the same with a fried or a boiled egg.  And don't even try suggesting scrambled.  :P  Dammitall, I'm just going to have to keep breaking that law then because without a poached egg, Eggs Benedict just isn't right. 

On the other hand, a really fine dish of Eggs Benedict is denoted by the shiny silver platter upon which it's served, with that lovely sauce spilling ever so gently from the sides of the muffin onto the plate's brightly reflective surface.  Because all the best chefs know there's no place like chrome for the Hollandaise.
