You could easily do something non-faire themed like a Bluegrass festival in the Fall.
Yor main competition for non-rennies would be the Fredericksburg Food & Wine Festival which is always the last non-Halloween weekend in October. Timing would play a big part in your success here.

I haven't been to a bluegrass festival in AGES. In fact, since before I met my husband! I think that would be an excellent venue and I'd try to drag my trusty Sidekick down for a weekend getaway.

I like all of the first three.. the summer camp sounds like a DISASTER waiting to happen. Children (and I don't just mean the younger ones) have a HUGE potential for accidents, and damage, and a whole host of other problems-- events which host children involve all sorts of waivers and safeguards and liabilities and such. I'm just not sure that it would be worth the inevitable headaches. UNLESS, you had an already organized group running the camp and you were just the provider of a location- then maybe it wouldn't be so bad.

Now, an ADULT summer camp- that could prove entertaining A fun-filled three-day weekend of something art-related.. or photography related.. or music related.. or astronomy related.. or history/legendry related.. you know, a kind of camp with workshops on various subjects at varying times throughout the day.

Weddings and wedding parties would be one option (which I assume is already under consideration). The church AND the stone circle are both beautiful, and the pub could easily serve as a place for a catering crew to set up wedding dinners (I'm assuming the pub is owned by the faire itself here, and not a vendor, of course- I may be incorrect).

Also, I'd absolutely LOVE to see some kind of photography thing set up out there for one weekend. A day when photographers and models and just normal people (ie- fold that WANT to do a shoot but are NOT models) could pay a fee to roam the gorgeous site (or designated parts of it) and take photos of each other. It would be a great location for portfolio work. And, you could set basic guidelines on the dress code if you wanted to-- I've seen some events that do a restricted dress code on day one and then a no-rules dress code (with an age restriction, of course) on day two.

Having been in human services for 25 years, and seen so many great ideas bite the dust, I concur with Gwen, that having a camp for kids would be living very dangerously.  The communists, that were hiding behind every tree during the cold war years, have been replaced by lawyers.

Oooohhhh.. a wine tasting! I particularly like that I idea.. and I happen to work for one of the owners of a winery right up the road (in Driftwood). I don't know if they ever do any off-site stuff, but it could be an option. Dr. Duchman is a wonderful vinophile, and the Duchman Family Winery is becoming fairly well known round here for some of their wines.  If you're a wine-lover in the greater-Austin area, even if we don't something out at the faire site, I highly recommend checking them out : http://duchmanfamilywinery.com/about/

I know its way in the future but just thought I would plant the seed now.  You should open up the faire for camping and revelry for December 21, 2012.  It is a Friday.  I haven't decided if I believe anything "special" will happen on that date but I can't think of any other place I would rather be.  Just a thought.

This place has a variety of different things that go on during the year.  Different faires/different themes that take place, ongoing "dinner theater", and Holiday events.  With Sherwoods central location (with-in Texas), something along these lines might just work here.  Just a thought..............
