This easy Spanish chicken dish is typical of Extremadura, a region in southwestern Spain, bordering with Portugal and is known for simple, uncomplicated dishes. Chicken is simmered with Serrano ham, garlic onions, brandy and fresh pureed tomatoes, creating a flavorful sauce. I serve it over safron rice to soak up the sauce.
