I don't eat organ meats... heart, liver, tongue, kidney... toxins build up in organs and are very difficult to get rid of through a regular diet, for any animal (including humans), so I just avoid them.  It's bad enough worrying about what the regular cuts of meat contain, much less the parts of the animals that are designed specifically to draw in toxic substances, whether they're able to dispose of them or not...  

I will eat a pretty wide variety of meats, from possum to snake, but I leave the innards alone.
I don't think tongue qualifies as a organ though.  It's all meat and tastes pretty good smoked.  Same with heart.

When my dad was a POW (WWII: Philippines & Japan), it really didn't matter what kind of meat it was. Monkey, snake, water buffalo, lizard, rat, dog... Meat was a luxury item in any form.
